Nacho Cheese Fries

 

Humble potatoes are an amazing food not only for health (when served without butter, bacon, sour cream, rancid oils and the like,) but also because of the satiety they offer and the variety of ways they can be prepared and enjoyed. In this recipe, potatoes are the star of both the fries and the fat-free, dairy-free nacho cheese dipping sauce. This recipe is simple to make and oh so delicious. Pair it with a leafy green salad for optimal digestion and nutrient assimilation and you have a dinner that will please the whole family.

Potatoes are also high in potassium and rich in vitamin B6, as well as a fantastic source of amino acids, especially lysine in its bioactive form. Lysine is a powerful weapon against cancers, liver disease, inflammation, and the viruses such as Epstein-Barr and shingles that are behind rheumatoid arthritis, joint pain, autoimmune disease, and more. Potatoes will be your allies if you’re looking to fight any chronic illness—to fend off liver disease, strengthen your kidneys, soothe your nerves and digestive tract, and reverse Crohn’s, colitis, IBS, or peptic ulcers. In addition to being antiviral, they’re antifungal and antibacterial, with nutritional cofactors and coenzymes plus bioactive compounds to keep you healthy and assist you with stress. Further, potatoes are brain food that helps keep you grounded and centered.

Nacho Cheese Fries

 

Ingredients:

Fries:
2-3 russet potatoes
1 tsp paprika
1/2 tsp garlic powder
1 tsp dried oregano
1/2 tsp sea salt

Nacho cheese sauce:
1 large potato, diced
1 carrot, diced
1 tsp turmeric
1/2 garlic powder
1/2 tsp cayenne
1 tbsp lemon juice
1 tsp sea salt
1/2 tsp black pepper
1/2 cup steaming water or vegetable stock

Directions:

Preheat oven to 400F. Cut the potatoes into thick fries, then place them in a bowl with paprika, garlic powder, dried oregano and sea salt. Toss to coat. Arrange the potatoes on a baking tray covered with parchment paper so that there’s space between the fries. Place in the oven and bake for 20-25 minutes, until browned, flipping them half way.

To make the sauce, add a couple of inches of water to a medium-sized pot and place a steaming basket in it. Add the diced potato and carrot, cover and cook for 25-30 minutes until soft. Remove from heat and set the steaming water aside.

Place the cooked potatoes and carrots in a blender with turmeric, garlic powder, cayenne, lemon juice, sea salt, pepper and the steaming water. Blend until very smooth. Serve in a bowl with the fries.

Shhh…This Cheesecake Is Dairy-Free

You can use the words indulgent and dairy-free in the same sentence. Like to describe this dairy-free cheesecake recipe with blueberry topping. It’s rich yet virtuous, which is achieved without using cream cheese or butter or even flour. (So, yes, it’s technically vegan.) Dessert, anyone?

 

One 9-inch cake (10 servings)

CRUST

1½ cups pecans

2 tablespoons sugar

2 tablespoons coconut oil

 

FILLING

 

3 cups cashews, soaked in water overnight (see note)

3 tablespoons sugar

2 tablespoons honey

Zest and juice of 1 lemon

¾ cup coconut milk

½ teaspoon pure vanilla extract

 

TOPPING

 

1 pint fresh blueberries

2 tablespoons sugar

Zest and juice of 1 lemon

 

  1. Preheat the oven to 375°F. Place a springform pan on a parchment-lined baking sheet.

 

  1. MAKE THE CRUST: In the bowl of a food processor, pulse the pecans until they are finely ground. Transfer to a medium bowl and wipe out the food processor.

 

  1. Add the sugar to the ground pecans and stir to combine. Add the coconut oil and stir until the crumbs are evenly moistened. Pour the crumb mixture into the prepared pan and press into an even layer.

 

  1. Bake the crust for 8 to 9 minutes, or until the edges are lightly golden. Let the crust cool to room temperature.

 

  1. MAKE THE FILLING: Drain the cashews and transfer to the food processor. Pulse until the cashews are coarsely chopped. Add the sugar, honey, lemon zest, lemon juice, coconut milk and vanilla extract, and pulse until very smooth (the mixture should be pretty thick).

 

  1. Pour the cashew mixture over the cooled crust and spread into an even layer. Transfer to the freezer to chill while you make the topping.

 

  1. MAKE THE TOPPING: In a medium pot, combine the blueberries with the sugar, lemon zest and lemon juice. Bring to a simmer over medium heat. Simmer until the blueberries are very soft and begin to burst, 8 to 10 minutes.

 

8.Puree the blueberry mixture in a blender or food processor until smooth. Pour the puree on top of the filling and spread into an even layer. Chill the cheesecake in the freezer for at least 45 minutes.

 

  1. Transfer the cheesecake to the refrigerator and keep chilled until ready to serve. To serve, unmold and slice the cheesecake.

 

Note: No time to soak the cashews overnight? No problem. Place them in a medium pot and cover with water. Bring to a boil and then boil for 15 minutes. Drain and cool the cashews to room temperature before continuing with the recipe.

Papayas stand in for bananas and mangoes in terms of making a smoothie creamy. Plus, these tropical fruits are high in vitamins C and A.

Use either 1 cup of coconut water or ½ cup water plus ½ cup coconut milk

 

Ingredients

  • 1 papaya
  • 1 cup blueberries
  • 1 banana
  • 1 cup coconut water

Instructions

  1. Place all ingredients in a blender.
  2. Blend at high speed until smooth and creamy.

Almonds Reduce Belly Fat

 

Replacing a high carb snack each day with a handful of almonds ( about 1.5 ounces) reduces belly fat.

 

For 12 weeks, researchers at Penn State University gave overweight volunteers with high cholesterol identical diets, with one exception – one group got a daily snack of almonds while a second group got a banana muffin snack equal in calories.

 

The almond snack reduced total cholesterol, including LDL (bad) cholesterol when compared to the muffin, and also significantly reduced belly fat.

 

Research found that substituting almonds for a high carbohydrate snack improved numerous heart health risk factors, including the new finding that eating almonds reduced belly fat.

 

People with chronic high cholesterol levels, need to be tested for thyroid problems also.  Almonds have been shown to work with thyroid problems also.

 

Gluten Free Honey Roasted Almonds  (Gluten Free, Dairy Free)

 

Ingredients:

2 cups raw whole almonds

1/4 cup sugar (I used evaporated cane juice sugar)

1/2 tsp sea salt

2 Tbsp honey

2 Tbsp water

1 Tbsp coconut oil

 

Directions:

Preheat your oven to 350 degrees F.

Mix the sugar and salt together in a small bowl and set aside.

Rinse the almonds and spread out on a cookie sheet. Bake 12 minutes (stirring every few minutes and watch careful not to burn them.) Set aside.

In a saucepan melt the honey, oil, and water together until it boils. Add the almonds and stir continuously for about 5 minutes.

You can either sprinkle the salt and sugar mixture on top of the almonds or you can stir the almonds into the mixture. Spread the almonds so they are not touching out on wax paper to cool completely. Store in an airtight container for up to 3 weeks.
